Gulassi eli Gulyás

Haluaisin kovasti elvyttää tämän blogin, joten ajattelin aloittaa perinteikkäällä ruoka-aiheisella postauksella. Muutin maaliskuussa takaisin Leppävaaraan ja sain tänne uuteen asuntoon vihdoin muutostyöt teetettyä keittiöön. Helpottaa kummasti ruoanlaittoa kun näkee mitä kattilassa tapahtuu ja ylettyy suurin piirtein kaikkein. Päätin eilenn että teen tänään jonkun kivan lihapadan ja päädyin lopulta unkarilaiseen gulassiin, eli Gulyásiin. Olen jo vuosia ollut Chef Johnin vannoutunut ihailija. Tässä siis videolla resepti:

Tekstiversion löytää englanniksi täältä. Noudatin sitä melko tunnollisesti, tosin etupaistin sijaan laitoin ihan vaan naudan ulkopaistia, koska olin pihillä päällä. Oikeasti olen aina vähän kujalla, että mikä naudan osa sopii mihinkin ja mitä eroa niillä on.

Varmaan ensimmäinen kohta missä tämän voi mokata, on että ruskistaa kaikki lihat kerralla. Kahdessa erässä ja kunnolla väriä pintaan. Sain tuon haudutuspadan mutsilta joululahjaksi ja se on aivan äärettömän paljon kätevämpi kuin esim. valurautapata. Silikoniset kahvat eivät kuumene, kaikki lika vaan liukuu tosta pinnasta irti ja sen voi myös heittää uuniin suoraan hellalta. Kiitos äiti!

Jos ohjeessa pyydetään murskaamaan kolme valkosipulin kynttä, niin ei varmaan haittaa jos yksi niistä on peukalon kokoinen monsteri? Ja ahhh, toi leikkuulauta Habitatista on niin kaunis.

Kun olin paahtanut sipulien jälkeen mausteet paistinpannulla, huuhdoin ne kanaliemen kanssa pataan. Mikään ei palanut! Vähän epäilytti kyllä ohjeen kaksi teelusikallista kuminansiemeniä, koska en ole ikinä ollut mikään kuminan ystävä. Tomaattipyrettä, balsamiviinietikkaa, sokeria, laakerinlehteä ja valkosipulia sekaan ja kaksi tuntia haudutusta…

Minä ja gulassini. No comments.

Chef John teki gulassinsa kanssa pastaa, mutta minäpä löysin kaapista eilen polentaa. Ajattelin että tollanen pussinpohjallinenhan pitää tehdä pois kuljeksimasta.

No, ei mennyt niinkuin Strömsössä. Pussissa pyydettiin laittamaan kasvislientä. Mulla oli vaan joku Lidlin kasvisliemikuutio, jossa oli pieniä kuivattuja porkkananpaloja ja mitä lie. Tuoksui ja näytti niin irstaalta että päätin hyllyttää suunnitelman.

Meinasin ekaksi heittää koko puuron roskiin, mutta sitten päätin hyydyttää sen lautasille ja kokeilla miltä ne maistuu huomenna pannulla paistettuna tähän tyyliin. Polentaranuja, ei voi olla huono.

Keitin sitten lopulta katkottuja tagliatelleja.

Ranskankermaa ja lehtipersiljaa päälle, lasi punaviiniä kaveriksi ja koneel…. pöydän ääreen sivistyneesti syömään. Niin vissiin.

Tomato Salmon Soup’

Today I thought I am going to make some tuna pasta. BUT. I noticed I have way too little pasta. I like to cook a bit bigger patch everytime so there’s leftovers for work or next day. And then I remembered I had some salmon fillets in the freezer. A plan began to emerge. Crushed tomatoes, the few handfuls of pasta, red onions, garlic, some small can of mushroom slices. And the salmon. Then I found some frozen pea-paprika-corn mix and added that too. And I remembered I have some instant Tom Yum-stuff and I threw a few bags of those too, just to give some asian flavour. I gotta say, it’s pretty good. I think I’m going to add some water to make it go a bit further, this plateful had quite a lot of stuff in it. The best thing about this was that I had all the stuff here at home! Didn’t have to go and buy anything. Which I couldn’t have done anyway since I have like 80 cents on my account at the moment.

I should make more soups. Especially now this time of the year.  It is Tuesday 25th of September now! I am going to schedule to tomorrow though, because I already posted one blog post today.

That bowl btw is from Iittala, the series is called Taika, which is the word for Magic in Finnish. I have only that one red bowl from it. Too bad, I really like it. I think they don’t even make it in red anymore, only in blue and white. I love big bowls because you can eat more from them once. The Taika series goes very well with another Iittala-series I have a lot of, Teema. I have a lot of Teema in black and white and some in grey, which has since been cancelled. Teema stands for Theme, in English.

Final verdict?

It was abso-fucking-lutely awesome.


Delicious Lasagna part. 1

I’m cooking some lasagna base on THIS RECIPE from Anne’s Food blog. Haven’t really read her blog but Pastanjauhantaa had made it too based on Anne’s recipe. I’m a huge fan. Okay I’m now just waiting for the sauce to boil for the two hours. I decided to let it boil on the kettle because I don’t know if I can lift it out of the oven. It’s 20.02 at the moment. The minced meat sauce is giving off delicious scent. Ahh nothing beats a good bolognese styled sauce.I did forgot something though, the cinnamon right in the beginning. Well, it did sound a bit weird anyway… Unfortunately I bought it from the store already. I really like K-Supermarket Mustapekka near me. It has really good range of products, especially in the cheese. If I have time, I rather come here than the nearest shops in Arabian Kauppakeskus.

The recipe included 3dl of red wine. Well, I was in the liquor store and I thought to myself, well that leaves only 4dl for me and well, let’s face it, that is quite boring. So I bought a 3 litre bag-in-box of Caballo de Mendoza from Argentina (23,50e). I am sipping it at the moment and it’s not bad. Actually quite good.

I feel like I’m the naked cook. Well, nobody can see so I don’t care. What’s more awesome than cooking without clothes to yourself a gourmet lasagna and drinking red wine. Ok this would be even better if I’d have some guy here to share this but alone is nice too. At least I don’t have to put on a make-up and clean up the flat up.

Hmmm. Is there some other stuff I have forgotten to babble about? I’m going to have to wear the cast for like 3 months more. I am cheating a bit, I’m not wearing it now, it’s one of the kind you can take off for shower and so on. I don’t like to wear it at home. It hurts and especially if I try to sleep with it, I wake up several times a night. And I think it has already created enough bone to be without the cast if I’m being careful and don’t put any pressure on it.

I’m listening Scandinavian Music Group while cooking. I really, really, really love this band and their newest album. I think Manner (2011) will be this Summers sound track. The gig in Ruisrock was really great.

I think I’ll make this a 2-part post because it’s already quite long and I have to go to chop some mushrooms for the next phase: THE THYME MUSHROOM LAYER…….. And then there’s the cheese layer, which is quite tricky. This one has a weird one, it includes creme fraiche and a bit of milk and parmesan. Usually I have just done the normal white sauce with cheese. We’ll see!!!

I am not entirely happy with the quality of my camera. DAMN YOU ZTE BLADE!

Basically:

I sliced three huge jumbo mushrooms. Added a huge amount of dried basil, olive oil, salt and CAYENNE (important!) and then I just let them cook for a while. And added some more oil. And some olive slices. Meanwhile I cooked a lot of spaghetti. Then with the mushrooms and olives I added a can of cream. Yes it was heavy cream. I can’t resist it. It calls my name. And then I added some soy too. And after that a can of crushed tomatoes and let it simmer a while. Then I just rinsed the spaghetti and mixed them together.
